Pita Pizzas!
Here’s a great (and very child friendly) weekday supper idea that we’ve used with great success.
You’ll need:
A pita for each family member
About 1 cup of chopped vegetables for each pizza (we like sweet and hot peppers, onions, mushrooms, and olives, especially!)
About ¼ cup of grated cheese for each pizza (a strong cheese is especially good)
About 2 Tbsp of tomato paste for each pizza
Assemble just like a pizza and grill in the oven. Instead of tomato paste, try pesto one night, or add meat, or even leftovers.
