Food Challenge Day 3


Samuel ate...wait, what did he eat for breakfast?  Right, a muffin.  And we finished off our vegetable plate as well.

Lunch was macaroni and cheese with hot dogs...because I was overwhelmed and covered in whining neediness.

Then for supper (another late night for David) Samuel and I had mini chickpea burgers.


Puree a can of drained and rinsed chickpeas with 1Tbsp cilantro, 1tsp garlic, 1/4 cup olive oil, 1Tbsp lemon juice, 1tsp cumin and salt and pepper.  Add enough whole wheat flour (or breadcrumbs) to make a slightly sticky dough.  Roll into balls, roll balls in sesame seeds, and fry in oil.  Serve with curry mayo.

After supper we went to visit David at work for a slushie.  Some days are nutritionally better than others!

In other news: the decluttering continues.  In some ways, I feel like I've barely scratched the surface.
Two days ago I emptied out my dresser, vacuumed the drawers out and tossed anything that needed to be tossed.  I also managed to fill half a large garbage bag with shirts, shorts and pajamas.

I continued yesterday by going carefully through my closet.  I filled up the rest of the garbage bag this way but I can safely say that I am done reducing all of my clothes that aren't in the laundry.  A happy side effect of this is that I've been able to clear up a lot of closet space, (two full garbage bags of clothing take up a LOT of room) including freeing up the children's closet for just their clothes, and my wardrobe, excluding my bathrobe, pants and dresses, now fits completely in my dresser.  I also got a chance to toss out all the wire hangers that had found their way into our closets.  I now know as well what I need to replace, and I'm going to make a list and start carrying it with me in my purse so that when I go shopping I can cross off items to get.

Today I've started slowly on the toy culling.  This is going to be harder to do because Samuel is very much at a 'mine' stage.  I think he's named and catalogued every scrap of paper, every unmatched sock and every cheap plastic toy he owns.  I, for one, am more than ready to start tossing!
