Tropical fruit cupcakes with banana buttercream icing

I used this recipe for the vanilla cupcake base, but switched the milk for tropical fruit juice frozen concentrate (I used Tropical Five Alive) and added a cup of drained and mashed pineapple.

The banana buttercream icing was 1/2 cup whipped butter and two cups icing sugar with 1 tsp vanilla and a mashed banana.  I also added 3 drops of yellow food colouring.

Verdict?  The cupcakes are amazing.  So moist and perfect.  The pineapple needs to be pureed because the chunky texture was distracting.  I don't like the buttercream but I don't know why.  Too sweet, I think.  I might try a banana coconut whipped cream instead.  Or possibly some sort of cream cheese banana icing with candied papaya.  Or maybe honey roasted crunch on top.  Ideas...

At least I liked the cupcakes.
