Something fun to make with puff pastry

I've had two rolls of puff pastry in my freezer for a few months now, and I'd almost resigned myself to never finding something to use them for, and then on Sunday I was stuck on what to make for lunch and out came the pastry to make a pizza!

This is the 'raw' before shot.  I used pesto as the sauce, and then pretty much emptied my fridge of all the bits and pieces of stuff in there.  If I remember correctly I used tomatoes, cheese, pickled mushrooms, roasted red pepper, cheese, capers and hot peppers.


Here's the after shot.  435 degrees for maybe 15 minutes or until the pastry puffed and became golden.  It was fantastic!
