Saturday

Despite the crazy amount of snow that fell yesterday (on me, no less, while I walked to work) when I opened my kitchen window at 6am there was a bird singing in the trees.  It makes me feel all Spring like.

Apple cinnamon muffins for breakfast, Mexican bean salad for lunch and Italian sausage soup for supper.  Shall we share recipes?

Mexican Bean Salad

A simple mix-together recipe that children can help with.

1 can black beans, rinsed
1 can whole kernel corn
1 tomato, chopped
1 sweet Vidalia onion, chopped
1 avacado, chopped
2 Tbsp hot peppers, chopped
1/4 cup Greek yogurt dressing (I use PC brand)
1 chopped garlic clove
Lemon juice to taste.

Combine everything and serve.  If you feel especially wonderful and energetic you can make your own crispy toasts in the oven by broiling pita triangles.  Naan bread is also great with the salad, too.

Italian Sausage Soup

5 Italian sausages, cooked and cubed
1 can diced tomatoes (I like the ones with herbs, but the sodium is a bit higher that way)
1 onion, chopped
1 can of mushrooms
2 cloves garlic, chopped
2 Tbsp Italian seasoning
oil
1/2 cup rice
1 boullion cube or 2 cups of stock

Saute onions, mushrooms and garlic in oil in a stock pot.  Dissolve boullion in water and add to the pot with all other ingredients except tomatos.  Puree tomatoes in a blender and add.  Cook until rice is done.
